The new Starbucks Iced Gingerbread Oat Milk Chai Latte is a flavorful holiday drink that brings together notes of gingerbread with chai infused tea and oat milk.

It’s topped with a creamy, frothed layer of gingerbread flavored oat milk and a dusting of cinnamon.

In other words, it’s an iced chai tea made with oat milk and sweetened with gingerbread syrup.

And it’s easy to make at home!

This copycat recipe makes the equivalent of a Starbucks grande, but you’ll have enough ingredients to make it again and again.

Starbucks Iced Gingerbread Chai Latte Copycat Recipe

The main components in a gingerbread chai are gingerbread simple syrup and chai tea concentrate. The Starbucks recipe is made with oat milk, but you can use whatever type your prefer.

Here’s what you need to make this iced chai at home.

Ingredients

  • Gingerbread Syrup
  • Chai Tea Concentrate
  • Oat Milk
  • Pumpkin Pie Spice

Gingerbread Syrup: All the gingerbread flavor in this latte comes from the syrup.

For the syrup, you have two options: get a bottle of store-bought gingerbread syrup or make my homemade gingerbread syrup recipe.

The homemade syrup recipe has molasses, fresh ginger and cinnamon in it, just like a gingerbread cookie.

Chai Tea Concentrate: For chai tea lattes, always use concentrated chai tea.

The latte has a lot of milk in it, so the chai needs to be strong. My go-to brand is Tazo.

You can also make my homemade chai tea concentrate recipe.

Oat Milk: The oat milk does double-duty in this latte. Not only is it in the drink, but it’s used to make the cold foam topping.

Get the “barista edition” if you’re also going to steam it for hot lattes, too. It’s creamier when frothed compared to standard oat milk.

Pumpkin Pie Spice: Starbucks garnishes the iced gingerbread chai latte with pumpkin spice topping. This spice is a mixture of cinnamon, ginger, nutmeg and cloves.

You can use pumpkin pie spice or a single spice like cinnamon or nutmeg.

Step-by-Step Instructions

  1. Add gingerbread syrup, chai tea concentrate and oat milk to a 16-ounce cup. Stir to combine.
  2. Fill cup with ice, leaving space at top for the frothed gingerbread oat milk cold foam.
  3. Add gingerbread syrup and oat milk to an electric milk frother and froth on the cold setting. Tap and swirl the frothed milk to knock down any bubbles, then pour on top of the gingerbread chai latte.
  4. Sprinkle pumpkin pie spice, cinnamon or nutmeg on top.

Recipe Notes

Don’t put ice in first. Add the ice to the cup after the drink components (syrup, chai and milk) for easy stirring.

Additionally, if you make the latte in a Starbucks cup, you can use the lines on the side to measure, without ice in the way.

First put in syrup and chai, then milk is poured to the third line.

Get barista edition oat milk. The Starbucks Gingerbread Chai has a frothed oat milk topping that has gingerbread syrup added to it.

Regular oat milk doesn’t froth well, so if you want a creamy topping, grab a carton of barista edition oat milk.

You can also steam the barista edition oat milk for a hot and creamy gingerbread chai.

Substitute in your preferred milk. This Starbucks latte is dairy-free, but you can make it with any milk you want and it’s just as delicious.

Make it decadent with whipped cream: All the best holiday lattes come with whipped cream. Am I right?

To customize your homemade gingerbread latte with whipped cream, just leave off the frothed oat milk layer and dollop on some whip.

Ingredients

  • 3/4 cup chai tea concentrate
  • 3/4 cup oat milk, divided
  • 2 1/2 tablespoons gingerbread syrup, divided
  • 1 cup ice
  • pumpkin pie spice, to garnish

Instructions

  1. Add 2 tablespoons of gingerbread syrup, chai tea concentrate and 1/2 cup of oat milk to a 16 ounce cup. Stir to combine.
  2. Fill cup with ice, about 1/2 inch below rim, leaving space for frothed topping.
  3. To an electric milk frother or small jar, add 1/2 tablespoon gingerbread syrup and 1/4 cup oat milk. Froth on the cold setting or use a handheld milk frother. Otherwise, shake in cold jar with lid until oat milk is frothed and creamy. Tap and swirl frothed milk to knock down any bubbles.
  4. Pour frothed gingerbread oat milk on top of the chai tea latte, then top with a dusting of pumpkin pie spice or cinnamon or nutmeg.

Notes

  • Add ice to cup after the gingerbread syrup, chai and milk, for easy stirring.
  • For a creamy gingerbread oat milk topping, use barista edition oat milk. Regular oat milk doesn't froth as well.
